Send a private quack!
Anyone in restaurant business is well aware of the term “backdoor”. And, if you’re not in the business, get your mind out of the gutter, because it’s not what you think.
To “backdoor” something is to bring food into your kitchen that, well, by law, shouldn’t be there. As anyone with the ol’ ServSafe certificate knows, food should only be purchased from an approved source. But when someone comes to the backdoor with incredible deals, on some beautiful, fresh, items, the temptation (in my experience) almost always outweighs the law.
Rules were meant to be broken, right?
Case in point…
I was at this restaurant a few years back, and weekly a forager would come by with some beautiful mushrooms that he had just picked. I’m talking: lobster mushrooms, honey mushrooms, hen of the woods, and many more. Try buying some of these tasty fungi from you produce purveyor. I’m willing to bet that they don’t have them. And, if they did, you’d be paying a lot more than I did.
For some reason foraging and granola types go hand and hand. And this guy was no exception. He was a total hippy, man. I always imagined him out in the woods, looking for mushrooms, with his headphones on and Phish or whoever, providing the soundtrack for his fungus hunts. If you saw this guy you would understand why there were laws about buying food from the likes of him.
Everyone one in the kitchen was always so excited when he stopped by. I mean we were giddy.
Now, you must be thinking to yourself, WOW, those people really liked their locally foraged mushrooms.
But, our crunchy forager was also supplying pretty much the whole restaurant with other types of “exotic” mushrooms. Not to mention various “herb” that he himself had grown.
That’s where he made his real money, and why we were practically paying nothing for the mushrooms he picked. Talk about “backdooring”!
I don’t condone the practice of buying anything from an unapproved source, esp. mushrooms. If you don’t know what to look for, you can make someone really sick or even kill them.
Also, I am not advocating doing drugs either. This is just a part of my life, and a darker side of the industry that I wanted to share. I can proudly say that I have been living the straight edge life for almost two years now.
As far as backdooring food goes…
I can’t give THAT up.
