One game (or game series) I've always wanted to play was the Paradius series. A parody of Gradius and a bunch of other shooters, the series is just insane... case in point is this video...

It's Parodius, and you probably could find that one pretty easily if you just look. I actually find Sexy Parodius to be one of the more straightforward Parodius titles. You get much weirder bosses in the other games in the series. Sexy Parodius just gets more attention because of the name.
I can't think of any weird games that I've wanted to play and couldn't get my hands on. I can probably recommend one for other people, though. One I particularly liked was Pu-Li-Ru-La. It was a beat'em up that starts out relatively normal and get more surreal as you play through with increasingly odd enemies and bosses as well as some really strange level designs.

Typically, the last boss in any Gradius or Gradius-like game is a complete joke. Usually a way of saying "You survived this thing, now go hit the win button."
I do agree with Isukun that, the bosses in the SNES parodius games were considerably stranger (Bosses such as a well-endowed Twin-bee like ship, evil mouths, a giant powerup, Moai-related stuff, and other Konami IPs).

Well, since we're on the topic of shooters...
This is a game I will NEVER play.
First: There aren't any proper arcades left where I live.
Second: I don't think the game is available in the entire country (or anywhere outside Japan).
Third: No way in hell I'd survive long in that thing, haha.
