I recommend Ergo Proxy. Dark, intelligent, and just over all high production values.
"You tell yourself to just
enjoy the process," he added. "That whether you succeed or fail, win or
lose, it will be fine. You pretend to be Zen. You adopt detachment, and
ironic humor, while secretly praying for a miracle."

Outlaw Star and Beebop are pretty good. They don't go for a jillion episodes like Bleach and Naruto do, either.
highest rating so far has been #11 in comic books, #13 overall. It's pageviews are almost half a million!!

I never really liked the Gantz animation. The excessive CG didn't work as well in the anime as it did in the manga, plus the manga was just written better. I wouldn't recommend the anime for Gantz, although I did like the manga. Besides, recommending video piracy probably isn't the best thing to do on a commercal site and the DVDs certainly aren't worth the price.
Monster is pretty good, up until the last episode (which is unfortunately the case with a lot of anime and manga these days). Still, it is quite enjoyable for the other 73 episodes.
I could probably recommend a few things I like, but judging from the series you've been watching in the past, I'm not sure you would like the kind of shows I watch. I have a tendency to favor box sets when it comes to anime, so I don't really keep up with what's popular now. When I can get a full series or at least 20 episodes for $40, that's when I become interested. Recently, though, the only things I've been watching from the store are more obscure things like Neoranga, Shingu, King Gainer and Shichinin no Nana (Seven of Seven), all of which are great shows within the genres they represent.
As for fan subs, though, I did kind of like the first episode of Macross: Frontier. They're getting back to their roots by copying the original series, but it might be interesting to see if they deviate from the old series, plus they have Yokko Kanno back for the music. Apart from that, I've also been watching Dennou Coil, Clannad, Myself; Yourself, School Days, Hayate no Gotoku, Hitman Reborn, Kaiji, World's Strongest Disciple Kenichi, Majin Tantei Nougami Neuro, Minami-ke, Murder Princess, Nodame Cantabile, Sayonara Zetsubou-sensei, and Seto no Hanayome. They probably won't all be your cup of tea, but you could check up on animesuki and look up the descriptions to see which mich appeal to you.
I know Hitman Reborn and Majin Tantei Nougami Neuro are Shounen Jump series (both Bleach and Naruto were also printed in Shounen Jump, so they at least target the same audience). I think D. Grayman is also still unlicensed.
Kenichi is a fight of the week shonen series. It actually gets kind of addictive as you watch it, although it doesn't go all the way to the end of the manga (here's hoping for another season or two). Hayate no Gotoku and Seto no Hanayome are more the shonen romance comedy types of series with plenty of pop culture references making fun of other anime, manga and video games.
Minami-ke is slice-of-life comedy in the same vein as Azumanga Daioh. Sayonara Zetsubou-sensei reminds me a lot of the newer Negima series or even Pani Poni Dash. Male teacher, mostly female cast, and a lot of random humor with characters that in any other show would be deeply disturbing (stalker, multiple personalities disorder, delusional, extreme depression, antisocial, etc).
Clannad, Myself; Yourself, Nodame Cantabile, and School Days are more high school/romance dramas. Nodame Cantabile is the only one that's really a shoujo series, the other three are based on visual novels. They aren't likely to be the kind of shows you'd want to pick up to take the place of Bleach and Naruto, although if you're looking for a change of pace, they're all pretty good shows.

For new series I'd go with Death Note and Samurai Champloo.
Old series I'd go with Cowboy Bebop and Outlaw Star.

Since the new season is on its way, here's a list of some anime coming up. [randomc.animeblogger.net] I'll definitely watch the new seasons of Minami-ke and SZB, but I'm not so sure about the rest.

Have you seen Evangelion yet? If not, then you MUST. Besides that, anime like Haibane Renmei, Cowboy Bebop, Tenchi Muuyo!, Metropolis and the Miyazaki movie are all really good.

I used to have a loooong list of my favorite anime. I don't remember all of my favorites, but here's what I can recall (click on each for a summary):
Tenchi Muyo
El Hazard: The Magnificent World (OAV)
Ninja Scroll (movie)
Cowboy Bebop
Inu Yasha
Magical Shopping Arcade Abenobashi
Read or Die (OAV)
FLCL (OAV)
Perfect Blue
Excel Saga
Azumanga Daioh
Photon: The Idiot Adventures (OAV)
Lain
...I haven't really watched anime in about four years, so I'm sure there's much better stuff out there now. But that was the stuff I thought was pretty solid back then.

Black Lagoon. It's about a Japanese businessman living among mercenary group around Thailand which runs all kinds of unusual errands.
It's some of the best animes that has some seriously crazy gunfights. You won't be sitting for hours listening characters drone on about stuff.
...And it's the only anime I actually loved. Bleach didn't even come close.

Why? It's insanely popular with Western anime fans. American publishers would have to be stupid not to pick it up.

It's not, although Frontier does share a few striking similarities with the original series (at least in the first episode).

The OAV had better animation and fight scenes, but ultimately, the story seemed more generic than the one in the TV series. Also, the TV series was originally titled with just the "R.O.D." abbreviation which stood for both "Read or Dream", the title of the second manga series, and "Read or Die" since it brought together the characters from both series. It is kind of an interesting series in that the anime isn't just a rehash of the manga.

Yea, but I saw that someone had already suggested the OAV. The series isn't bad, But the OAV was kinda short. I'm guessing Donkas wants to watch something that'll take a minute to finish.

Tengan Toppa Gurren Lagann and Trigun. Best animes ever.
You could just find an anime here , though.
But I've only just discovered it so, I don't now if it's any good or not.

The anime that I'm currently obsessing over is Higurashi no Naku Koro ni. It's a horror/mystery anime, and it is one of the few animes that I have seen that has such a great grasp of suspense. Don't let the cute character designs and laid back pace of the first episode fool you, it gets into some pretty dark stuff. It's Not as bloody as something like Elfen Lied, but it's pretty high up there, so if you don't like blood, you might want to stay away.
But if you want to be able to rent it from a store, you're probably going to be better off with something popular. I reccomend Death Note if you're feeling like something intelligent and darker. If you want something funny, try checking out Azumanga Daioh!, it's hilarious.
