I know that this question is near impossible. We all have fond memories of old games (I spent a lifetime playing Super Mario 2) and new games alike (let's just say Batman Arkham Asylum) but can you pick one (or two) of your favorite games of all time?
It's tough I know! You will probably see someone else's post and say, "DAMN, I loved that game too!" but try to keep your list short. I'll start us off:
Metal Gear Solid
Castlevania Symphony of the Night
Both these games left an indelible mark on me. I relished the entire game from start to finish. Sure CsotN is notorious for terrible acting but the game play, items, secrets, all that stuff spoke louder than Alucards crappy speech!
Both games had me absorbed for hours.

Two games? Well, here goes:
Super Mario World (SNES) - It was the first game I ever owned, and certainly the one I've played the most often. I used to be able to beat those Donut Plains levels in my sleep (I dreamt about doing so often enough).
Star Wars: Rogue Squadron (N64) - If ever a game was in the right place at the right time for me, this was the one. The height of my Star Wars fandom (including a rather unhealthy obsession with the books), before the reality of the prequels came smashing down on me, I didn't just play this over and over again because I loved it, but because the memory in my cartridge reset itself on a pretty regular basis, so if I wanted to have all those gold medals (and the ships/levels that came with them), I had to keep beating it every few months for years. I didn't mind, and I still think Factor 5 had the right idea, putting the main game on planets' surfaces, rather than in space (the sequels just didn't snap for me the same way that first game did).
I'm going to close by mentioning that this is how I feel today, and that tomorrow I may well switch one or the other out with KOTOR, or Starcraft, or Super Smash Bros. (no bloody Brawl, or Melee, or what have you. The original), or any one of many games I can't think of currently. But, for now, I'm comfortable with my decisions.

Man, I can think about A LOT of games that I just loved in Arcade, SNES, PS2...
But if I have to narrow it to just 2:
Megaman X3 (SNES): While I love both X and X2, this is my favorite of the series. It had awesome soundtrack, the best Mavericks and so many secrets and new weapons that it really felt different from the previous games. Besides that you had the chance to play as Zero (even if it was just in the opening mission).
WWE Smackdown vs Raw 2008 (PS2): I've always had a really soft spot for Fight and Wrestling games, and this is my favorite of all time. It had the best roster of the ENTIRE SERIES (Sabu, Terry Funk, Rick Rude, The Sandman, Steve Austin, The Rock, CM Punk...if only they could have add Rob Van Dam and Chris Jericho to that version...). The "Create-A-Wrestler" mode was awesome and the General Manager mode was always a blast for me...

Earthbound (SNES) Quirky, unique, was one of the most unusual yet addicting RPGs to have existed for years. Still a classic.
Shin Megami Tensei: Nocturne (PS2) A completely ultra dark supernatural setting with frequently amoral characters in futile situations. I pray for a sequel some day. It was brilliant.

I'd say I've probably spent more time playing Gears of War 2 than any other activity in my life... Does that make it my favorite? IDK It's hard to say what my favorite game is. There are certainly games I can't live without. Choosing between them is just impossible for me. Here's a list off the top of my head in no particular order:

Guardian Heroes still is and likely will forever be, my favorite game. It would be nice to see someone surpass it, but with the way things have been going in the industry, I don't have high hopes. I think of the more recent games Castle Crashers came closest, but still didn't quite hit the mark.

The games I always find myself going back to play time and time again are the Warioware games. The games are just so genius, funny, and great to play. Plus, they have great replay value.

I grew up spending most of my time playing the original DOOM games, as well as the first QUAKE, mainly due to my obsession with lovecraftian horror themes.
Other than that, I'd have to say Earthbound, because of how different it was from all other RPG's at the time it was released.

The Legend of Zelda:Ocarina of Time(Virtual Console): It was a blast when I started it. Imagine my excitement when I saw the Megaton Hammer, Epona and the Fire Temple. IMAGINE MY Level of scareness when I passed the Shadow Temple and when I fought Ganon!

And if the lying, backstabbing f#$-up localizer Ignition hadn't weaseled into a contract that they hardly filled to the barest minimum, stripping all the humour and flavor out of the story, I'm sure Muramasa the Demon Blade would be my second choice. I think that distinction will go to Shadow of the Colossus, probably because I'm listening to its soundtrack right now.

I stepped away from gaming for a few years because I told myself I was getting to old to spend money on new consoles. Just last Christmas my wife bought my an xbox 360 with Fallout 3. To be honest, the game blew me away! I think part of it was because it was the first "next-gen" game I ever played. I just loved the choices presented to the player, the gritty post-apocalyptic RPG gameplay and the HD graphics.
With that said, I don't think I have a single FAVORITE game....
Here are a few games I've played through multiple times, so I guess I would consider these some of my favorites.

Actually, I had some problems with Fallout 3. I thought it was too slow and clunky. I know that it's a solid game and I don't think that there is anything wrong with other people liking it...but I guess I was expecting something different from it.

I can't think of anything specific but Star Fox 64 is pretty high up there. The game is damn near perfect(with the exception of the Aquas level, but even that had its moments).

1. Super Mario Bros 3- Though I enjoyed most of Mario throughout my life, this one put the "Wow" into Mario. The ability to first fly, the many uses of the suits, and that introduced the koopalings (which will have it's youngest member added later on in the series.). That game was also were I made bets. $20 to a 10 year old was pretty sweet and made my day at school.
2. Final Fantasy 4 & 7: Ok, I'm a sucker for Cecil, but give the man his dues. That and Golbez made the game worth playing OVER and OVER again. As for 7, that game help me realize that RPG's are worth playing again. Speaking of which, I need to find a new one to play.
3. The Megaman Series (Not X, BN, Z or SF)- Outside of the other series, I find it most enjoyable to play the original megaman games again and I'm considering playing the MM hacks for muy PC....

When I saw your username as the latest post, I was half-expecting one of the Legacy of Kain games to pop up, mostly Soul Reaver.
Anyway, since it's really hard for me to pick a list of favorite games, I'll just pick the first two that pop into my head:
-Conker's Bad Fur Day, mostly because it takes all the conventions we know of from Rare's N64 output (collect-a-thons, altruistically helping NPCs as a means to an end, etc.) and throws most of those out to sea. Instead, we have a "hero" who could care less about an NPC's plight, and instead wants their money. Not only that, but the game is far more linear, with the only collectable being money. Finally, despite the cutesy appearance of many of the characters, the game has some of the most bizarre, raunchy, and disgusting humor put into a video game. The only real problem I have with it is some of the levels are really frickin' tough, like the part where you have to swim through fan blades, and even putting a pixel of your body on the fan means instant death.
-Deus Ex. Talk about a game that's an experience. I've owned this game since 2002, played it through many times, and I still haven't discovered all the secret conversations and such in the game. Voice acting and graphics aren't the best, but who the hell plays games based on those in the first place? I love the storyline, I love how RPG elements are mixed in with the FPS gameplay (and did it much better than Bioshock, in my opinion), and I love how JC interacts with other characters. Too bad the sequel is nowhere near as good as the original (then again, dumbing down a franchise for consoles will do that).
There are a lot more games that I also like, but it's very hard to pick which ones are the best of the lot. These two, I feel, are the cream of the crop for me.
