Can you guys name some good 2 player (or whatever amount of players, just more than one) games on Playstation 2, Xbox, and Gamecube? I'm mostly referring to cooperative games...and I don't mean online multiplayer either.

Good cooperative games seem rather rare nowadays....or am I just not looking hard enough?

Check into Gladius if you haven't already. You can play with four people (I think - if not at least two), and it's a REALLY good tactical RPG. For both GC and XBox, too.

Off the top of my head I can think of The Adventures of Cookie and Cream on PS2, a purely cooperative game that absolutely no one's heard of. And on Xbox... there's a beat-em-up game called Spikeout that's pretty fun. Both are hard games though. And then there's always Dynasty Warriors, which I enjoy.

When I need a multiplayer game I usually just break out a fighting or racing game. You're right, there aren't very many cooperative games anymore.

Grand Theft Auto: San Andreas can be a blast to play with two people, As can Burnout Revenge.

nothing quite beats the co-op in splinter cell: chaos theory

as for the gamecube. i 've heard Legend of Zelda four swords, sucked as a single player game, but was fun with friends.

Others would be Dead or Alive 3, Tekken Tag Tournement, Twisted Metal Black, Half-Life for PS2, and Timespliters 2.

All great games with co-op. All released when the systems were young.

hmm... well the Gauntlet series is pretty good to romp through with a buddy.... also the X-Men co-op games are alright....

Legend of Zelda: Four Swords is very fun to play with friends, but my champion is the X-Men Legends series. God damn that was fun playing with a friend or two. Like all co-op games, a nightmare to control sometimes but so much fun.
Or for some ye olde fun, I'd say Baldur's Gate: Dark Alliance or somesuch. Slash, spell, cast, repeat.
Spritely - for all your funny needs.
Total Immersion - for all your Pokemon-centric pseudo-romantic story needs.

Something for everyone!

If you have friends with GBAs, Final Fantasy: Crystal Chronicles is a lot of fun for cooperative play. But the "friends with GBAs" part is crucial. The game's not very fun when you're alone.
