Hehe... I only see one way of holding chopsticks in this video. I hold them that way when I use them. I've noticed the local Koreans hold them crossed in their hand, a technique I have yet to master.
Oh, and holding a whole chicken leg using chopsticks while eating it tends to freak the tourists out. %)

Ah, I always hold my chopsticks crossed style. I notice Chinese hold them in two styles, either separated style like this Japanese video or the crossed style. I find the separated style is harder to use than the crossed style. That's probably because I'm used to eating the crossed style.

I hold mine in the style of the video, not crossed. But I short of have two fingers on each stick. I've been using them since I was six.
I've eaten ice cream and picked up water glasses with chopsticks. (Usually only around my family, though.)
While I was staying in Japan, I was complemented on how well I used chopsticks a lot. It happened a lot, so it sort of bothered me. Sometimes I'd get back at those people by telling them that they use a fork very well.

I eat with the separated style, for some reason my hands get cramped after a while, so id shift to utensils halfway through the meal. so much for first impressions.

A chinese person taught me how to use them. As a result I can use them as easy a fork.
