In a way he can sense when Jack's at death's door, and can sort of "watch" some things. I'm not saying he's God and can see EVERYTHING, even he has limits...but it's even easier to do this with Jack due to them sharing the same bloodline. (Orlock's not a Drone, but it's a very similar situation. =P) Just uh...lets say Jack has a hidden, blurry, soundless camera somewhere on him that Orlock peaks through sometimes. XD
As for not being able to come to his aid every other month, obviously this sort of thing has happened before when he's away from Orlock's castle, and during that time Orlock would rather stay at his castle and play butcher/dungeon keeper, as well as delve in elder vampire politics than have to worry about Jack.
